Baked quince - a light, cheap, healthy and fragrant dessert
2 quinces cut lengthwise into thick slices
1 cup of sweet wine
1 orange, juice and grated peel
1 lemon, juice
1 cup sugar
1 piece of cinnamon
1 tablespoon grated butter
Wash and clean the surface of the down quinces, cut them lengthwise into thick slices and remove the middle and seeds.
When we cut them, we put the slices in a bowl of water with lemon juice so that they do not oxidize and change their color. Another option is to pour lemon juice on top.
Put in a tray half of the sugar, then the quince slices, then the rest of the sugar and the other ingredients.
We spread the butter in small pieces. Cover the tray well with the lid and if it does not have a lid, with baking paper and bake in a preheated oven at 180 oC for approx. 2-3 hours until I get a ruby color.
Serve after cooling, plain or with vanilla ice cream, or with whipped cream on top.

Although they are astringent, linden and difficult to consume as such, the quinces cooked in this way turn into a delicate and very fragrant dessert. Their warmth and smell will create a fairytale atmosphere throughout the house.
This dessert can also be served to children from one year. Avoid using dried fruits as a filling that can cause allergies, such as peanuts or peanuts.
Honey can be replaced with maple syrup in children under one year of age.
• 2 quinces (or more, depending on portions)
• nuts (almonds, hazelnuts, cranberries or raisins)
• cinnamon sticks, aniseed stars, basil, mint or other spices
Turn the oven to heat well until the quinces are ready. Wash them well, removing fluff and wormy parts. Cut them in half and remove the seed stalks.
Also remove the hard, non-consumable parts and dig a little in the middle to put small pieces of nuts, raisins or other fruits in the center.
Place the quince pieces in the oven tray lined with baking paper. Sprinkle cinnamon over them, if you like.
Put the tray in the hot oven and let the quinces bake for about half an hour, or until the fork penetrates easily into their meat.
Serve the quinces hot or cold, plain or with honey on top.
Quinces can also be filled with magiun or any kind of jam (apricots, nuts, cherries, sour cherries, etc.), with pieces of bananas, plums or other fruits. You can also garnish them with cream or chocolate sauce.
Another option would be to cut the quinces into quarters or thicker slices and place them in the tray as such. Sprinkle walnut kernels and raisins between them.

Quince and apple pie
It is a recipe available to anyone. For this pie you need: two quinces, a tablespoon of flour, two teaspoons of sugar, two medium apples, which we clean and cut into thin slices, a teaspoon of vanilla extract, two tablespoons of brandy, 60 ml of cold water, half a teaspoon of vinegar , 4 medium quinces cleaned and cut into quarters, a pinch of salt, 65 g cold diced butter, 3 tablespoons sugar, 270 g flour.

Add cold water and vinegar and mix. The dough thus obtained is placed on a plastic food foil, wrapped and refrigerated for 30 minutes.
For the filling, mix the diced quinces, brandy, vanilla and apples in a bowl, over which a spoonful of flour is placed. They are consumed after they reach room temperature, they are not recommended for long-term storage in the refrigerator.
Quinces stimulate immunity and significantly reduce the risk of tumors, due to the high content of antioxidants and vitamins.
Through tannin they help maintain the integrity of the digestive mucosa, and are used since ancient times for their anti-inflammatory, analgesic, tonic and expectorant role. Due to its potassium content, it helps regulate blood pressure.
