We wash the pumpkins, cut off their heads and grate them with the peel. We salt them a little for 20 minutes and let them soften and let the juice.
In a bowl, beat the eggs well, add the drained zucchini, add the cheese, season with salt and mix until well blended.
We pour the resulting composition in a tray, preferably a little smaller than the oven one, in order to make it thicker, which we cover with baking paper and put in the oven until it browns nicely. When it is ready, turn the roll sheet on another baking paper, roll it and leave it until it cools completely.
When it is very cold, we open it and fill it with cream cheese. Refrigerate until ready to serve.

This roll is an aperitif that can be found very well on holiday tables, birthdays, family parties, but we can also prepare it for breakfast. It is very healthy and is another way to eat easier and more enjoyable, the combination of spinach with cheese being excellent.

First we prepare spinach: chop the onion and small garlic, put it in a little oil, then add it spinach, and let them boil for 15-20 minutes (I used spinach frozen, but in season it can also be used spinach fresh). Taste with salt and pepper and let cool.
Separate the yolks from the egg whites, and mix them with the sour cream, the 5 tablespoons of flour and spinach chilled and finely chopped. Beat the egg whites with a little salt and gradually incorporate them into the composition spinach. Wallpaper a tray with baking paper (I used the large tray from the stove), pour the composition and put it in the preheated oven for 15-20 minutes.
When it is ready to brown, take out the roll sheet and roll it slowly, along with the baking paper, and let it cool.
In the meantime we take care of the cream: we put it in the robot cheese, onion, sour cream, dill, salt, and mix well until you get a creamy and fine paste, fill the roll sheet with cream cheese, and we run again. We pack tightly with baking paper or food foil, and let it cool for 2-3 hours, so that it hardens and can be sliced.

1. For starters, we put the pumpkins through the large grater.

3. Using a knife, cut the dill. We cut the tomatoes into rounds and we mix the garlic with mayonnaise.
4. Strain the pumpkins into a separate bowl.
5. Add the eggs, dill, pepper, flour and mix well until smooth.
6. In a hot pan with oil, fry a pancake consisting of a quarter of the composition.

200 gr minced pork

1/2 bunch finely chopped dill
a cup of white wine
a cup of hot water
salt and pepper to taste

Roll the muscle, tie it tightly with a food string, from one end to the other, sprinkle it with salt, grease it with a tablespoon of oil, then place it in a tray that I have previously greased with oil. Pour the cup of wine and the hot water into the tray, then put it in the oven for about an hour and a half on the right heat. Cake (Easter) poured with cream cheese
- 600 g fresh cow's cheese in whey (I used faisselle)
- 6 eggs
- a little salt
- 170 g sugar
- 150 g melted and cooled butter
- 1 sachet of vanilla sugar
- vanilla essence
- 4-5 tablespoons flour
- 1/2 sachet baking powder
- a few raisins (optional)
For starters, let the cheese drain in a thick sieve for 1 hour.
Separate the eggs, sprinkle a little salt in both bowls, and over the yolks add the sugar and mix well, well until it changes color, add the melted butter, vanilla sugar and vanilla essence, cream cheese, mix until well blended, and finally flour mixed with baking powder, we get a thicker consistency, set aside and take care of the egg whites.
Separately mix the egg whites with a pinch of salt until you get a hard foam and pour it over the yolk composition, and with the help of a spatula mix well with light movements from bottom to top.
According to your preferences, you can add raisins to the composition, I preferred to sprinkle a few on top, before putting the tray in the oven.
Put the tray in the oven for 1 hour at 150 & # 176C without ventilation.
When ready, leave the tray with the oven door ajar until it cools.
According to your preferences, you can powder it with powdered sugar, a fruit sauce or sour cream. it's very, very good!
Roll with tuna paste
A light aperitif, suitable for the New Year's Eve meal or a family holiday.
Thus, for its preparation we need the following ingredients.
For the dough (I used the recipe from the roll with cheese and ham):

To start we take care of the dough: melt the margarine, then add all the flour, mix well, then put the milk, mix, remove from the heat, and add whole eggs, one by one, and salt powder. The dough should have the consistency of a thick cream, this composition is poured into a tray lined with baking paper (I used the tray from the stove), and put in the oven at medium temperature, 35-40 min. When it is ready, leave it to cool, and in the meantime we start preparing the filling.
Finely chop the onion, and rub it a little in your hand to soften it. Then add the fish, butter at room temperature, mix well until a homogeneous paste is obtained. Then add the olives, cut into thin slices. Taste and if necessary add salt, but be careful because the tone is salty.
The filling is ready, it is spread well over the baked dough, it is rolled with great care along the length of the roll sheet, it is tightly wrapped with food foil and it is left to cool for 3-4 hours, after which it can be sliced.

Easter with cottage cheese and raisin filling
This Easter variant does not differ much from the Moldovan one, but as this year I only made Easter and gave up the cake, I thought of posting the recipe head to tail, because my beauties still came out that way.
This is the traditional Easter recipe with cheese and raisins, it's nothing special, I know that others also make Easter with fruit or chocolate, but in my opinion, this is no longer Easter, sir, but the cake!
The yeast dissolves in warm milk + 50 g flour + 50 g sugar.
Leave to rise
After the dough has risen, add 250 g of sugar, the rest of the milk and flour, 3 whole eggs, salt. Knead until the dough is formed, then gradually incorporate the melted butter.
The cottage cheese is mixed with 300 g of sugar,
sour cream, soaked raisins, 7 eggs, semolina and flavors.
Choose round trays, grease with butter, line with flour.
Part of the dough covers the bottom and walls of the molds,
and the rest of the dough is made into braided rolls. Fill the forms with cheese and place the dough rolls nicely.
Grease with egg, leave to rise a little, then bake in the hot oven for an hour. Remove from the mold.
