In a bowl put sifted flour, powdered sugar, cold butter cut into pieces and egg yolk. Knead by hand until you get crumbs. Put water and continue kneading until you get a compact dough.

Put the dough on a food foil and wrap it. Put it in the fridge for at least 30 minutes. The longer it stays in the refrigerator, the more fragile it will be.

We wash the peaches and cut them into strips about 2 cm thick.

In a pan on the fire put the butter together with the sugar and let it make copper caramel over low heat (about 5 minutes).

Turn off the heat, put the peaches in the caramel and mix them lightly without crushing them. Add the vanilla and almond essence and mix a little more. Let them cool.

Prepare a 25 cm cake pan. We place in it the peaches arranged piece by piece in a circle. Pour over the remaining peaches and caramel.

Remove the dough from the fridge, spread a tart-shaped sheet out of it and place it over the already arranged peaches.

We push the dough on the edges of the tray.

Put the tray in the preheated oven at 180 degrees for 25 minutes. It will brown nicely on top.

Remove the tray and leave it to cool.

When it is cold or warm, place a plate on top of the tray and quickly turn the tart.


It is served as such, with whipped cream or ideally with ice cream.
