Strawberry puree preparation:

Step 1: prepare the berries.

Wash the berries well so that they do not have pieces of earth and grains of sand. Then, with a knife, cut the stalk from each berry, or as the tail says, and put all the berries in a blender bowl. Beat them at the highest speed for 10 minutes to porridge-like foam. Then we take a clean sieve and put the ground berries in it with a clean tablespoon. We rub through it the whole strawberry gruel directly into a clean deep bowl.

Step 2: prepare sugar syrup.

On the stove, turned on, put the stewpan on a strong level, pour into it 2 cups clean distilled water and pour 2 kilograms of sugar. When the water and sugar boil, we fasten the stove to a low level and boil the syrup until the sugar is completely dissolved for 15 to 20 minutes, stirring it intensively with a wooden spatula so that it does not burn and the strawberry puree does not smell like the smell of burnt sugar. Remove the finished syrup from the stove with a waffle towel and let cool up to 35 degrees it is possible and less, for example, to room temperature.

Step 3: combine the ingredients.

Pour the cooled sugar syrup into a bowl with strawberry gruel in a thin stream, while mixing the ingredients with a wooden spatula. Then we take concentrated lemon juice, which can be easily purchased at any store and add it to a bowl with syrup and strawberries using a measuring spoon. Do not add a lot of lemon juice, you can acidify strawberries, 50 milliliters will be quite enough. Once again, thoroughly mix the ingredients with a wooden spatula. Here you have a delicious mashed strawberry. But how to save it? This is very easy and simple. While we are going to prepare the containers for storage, put the strawberry puree in the refrigerator so that it is a little infused, an hour will be enough. Step 4: prepare containers for storing strawberry puree We take 6 half-liter cans, rinse them under running water with the addition of any detergent. Wash cans thoroughly so that they do not leave streaks of detergent. Then, on a stove turned on to a strong level, put a kettle half filled with ordinary running water, put 6 iron covers in it, and insert the neck of 1 can into the hole from the kettle’s top. Thus, we sterilize the entire container in which strawberry puree will be stored. After boiling water in the kettle, the jar will be covered with perspiration from the inside, do not worry, the process is going right, it should be so. Each jar is sterilized for 15 minutes or more. Using a wafer towel, remove the hot sterilized jar from the kettle and place the neck down on the table previously covered with a second waffle towel. When all the cans are prepared, we give them time to cool and dry. Since our puree will be stored fresh, the jars should be perfectly clean and completely dry. But it is not worth drying them in any way, since you can accidentally introduce bacteria we do not need that will prevent fresh strawberry puree from being preserved intact. After the cans have cooled and dried out and the mashed potatoes are infused, we take it out of the refrigerator and pour it into the prepared cans. Using conservation tongs, we take out clean lids from the kettle and tightly close the jars with strawberry puree. Melt the wax in bowls and cover the cracks between the banks and the lids. In order for fresh strawberry puree to be stored in a cellar or in the refrigerator, a pantry for storing this product is not suitable.

Step 5: serve strawberry puree.

Strawberry puree in itself is very tasty and can be eaten with a spoon directly from the can, but only after it has warmed up a bit and will not be very cold after standing in the refrigerator. But if we talk about the professional serving of this dish, then you can serve it in a jam vase next to which they put a stack of rosettes in which guests or members of your family will put strawberry puree with a teaspoon.
