Cooking nut sauce:

Step 1: prepare the ingredients.


First you need to choose the right walnuts, the best option is young, they are fresh, they have light kernels and a sweetish flavor. Of course, those nuts that are stored for 1 year are much fatter and they make a richer sauce, but when you buy them, no one will guarantee that they are not rancid.
After the choice is made, we sort through the nuts and remove small husks from them, shell fragments, if any, and transfer the kernels to a deep plate. In a small container, for example, pour peanut butter into a gravy boat, its amount depends on how rich the sauce you want to cook. Pour the right amount of salt and spices, which are indicated in the recipe, into a separate plate and mix the spices with a teaspoon until smooth. Also peel 3 cloves of garlic and peel them in a plate for spices.

Step 2: chop the nuts.


Now we install any meat grinder on the kitchen table, for example, an ordinary manual grinder. Gradually grind through it all the walnuts directly into a deep bowl. After that, we grind the nut mass through a meat grinder so that the pieces are smaller and more nut oil is released from them.

Step 3: bring the sauce to full readiness.


In a bowl with a nut mass, add all the spices mixed in the plate, using garlic presses, squeeze the garlic cloves into it and grind everything with a fork to a homogeneous consistency. After we turn on the stove to the middle level, put on it a deep stewpan with 100 milliliters of pure distilled water and bring the liquid to a boil.
Gradually pour boiling water into the nut mass, while mixing all the components of the sauce until smooth. Then, in the same container, add the right amount of white wine vinegar, and 3-4 drops of peanut butter, for my taste, the ideal proportion is a tablespoon, that is 25-30 milliliters.

Re-mix all the components of the sauce, taste and add more salt and spices if desired. The result should be a mass similar to pancake dough or sour cream of medium density.

Basically this type of sauce is served with chicken, so we will follow the principles.

We put in a deep plate preheated baked, boiled or fried chicken meat.

Fill the chicken with a fragrant nut mass and serve.

Step 4: serve peanut sauce.


Walnut sauce is served at room temperature or in the form of heat. This flavored walnut mixture is poured into fried, stewed or baked chicken meat, and also sometimes it is served separately in a sauceboat for fried fish, stewed or boiled vegetables. But this sauce can be considered universal, it will be just as tasty as an addition to any kind of sandwiches, as an addition to mamalyga, or as a simple and at the same time great dressing for a salad of fresh vegetables. - Walnut sauce can be prepared from any kind of edible nuts, walnut is a traditional ingredient in Georgian cuisine. If you take hazelnuts for cooking the sauce, then first you need to lightly fry them, cool them, clean them from the top shell, and then follow the recipe.

- In addition to the spices indicated in the ingredients, you can add a few spices such as hops - suneli, uzo - suneli (blue fenugreek), black pepper, red pepper, allspice and saffron.
